Today is moving day at Africa Adventure Consultants. We’re not going far – just down the hall – but to a more comfortable space to accommodate our growth. The new view of the mountains isn’t half bad, either! Anyway, all this moving will probably have us hungry by day’s end, and we won’t be too excited to spend a lot of time cooking after all of our hard work. That’s where ‘Zhoozsh!’ comes in. This great South African cookbook is full of quick recipes (and recipes with lots of shortcuts) so that we can get a meal on the table fast. Very necessary after a day like today.
Brown 8 chicken thighs in 1 tbsp oil. Once browned, add 1/2 c chicken stock and cook for 25 minutes over medium heat until the chicken is done. Remove the thighs and set aside covered to keep warm and save stock for another use. Wipe the pan out then add 1/2 c white wine and 1/2 c balsamic vinegar and bring to a boil. Boil on high until reduced by half. Add 3 tbsp butter and stir until incorporated. Drizzle the sauce over the chicken. We’ll be serving this with a side of quinoa and roasted leeks.
